I was making some steamed iced Americanos (Aerocano) last summer and really enjoyed that. I also enjoy the citros (nitro cold brew with a bit of lemonade) and find them very refreshing! So I decided to combine both and made this.

Simple syrup made with honey, fresh squeezed lemon juice, a double espresso, steamed with crushed ice, and served over a giant ice cube. Dialing in the recipe but it’s a delicious refreshing summer drink.

Looks good. What does steamed mean in this context?

my understanding is that if you put the espresso, ice, and water in a frothing pitcher and use the wand to pump some air in there, you get a foamy, almost nitro-brew textured americano.

dandan@kbin.social that’s exactly right. You steam the espresso shot mixed with the ice, honey simple syrup, and lemon juice just the same way you’d steam milk.

I guess the simple syrup must be enough to allow the drink to hold it’s foam? How’s stability?

I’ve done some screwing around with steaming espresso prior and it’s never ‘held’ the air in any way resembling this drink.

That would make sense, I think the lemon juice helps too. This photo was taken about 4-5 minutes after steaming. I drank it slow and it had body for like ten minutes. Cloudy after that but definitely watered down, it was a really hot day.
