Basically I want to create another account so that I can start a few communities, since lemmy.one doesn’t allow for community creation. But after filling out the sign up details it never loads or completes

You could try kbin. It has an easier path to entry and being in the fediverse still able to access the same content. I do not intend to start a fediverse war here though.
Have they fixed the kbin/cloudflare federation issue?
