“Wanna shit” is a bit of an understatement for what happens, but yeah, just take a 9000 unit lactase pill every 30 minutes while consuming it and you’ll be fine. Or maybe two pills if you’re eating a LOT of cheese.
Ripened cheese (eg cheddar, Emmental, Monterey Jack, Parmesan, Brie…) usually does not have any significant amount of lactose left. The ripening process gets rid of it.
If you are lactose intolerant you just need to avoid fake/processed „cheese“ and fresh cheeses (eg mozzarella, ricotta, cream cheese).
That said, taking lactase pills when it’s not necessary will not hurt you, just your wallet.
If you can get lactose free milk where you live (which in and of itself is a godsend), then you can make lactose free mozzarella from it, just follow online videos for meeting your own mozzarella (it takes like 30 mins and you can freeze it)
Also might be worth looking into products made from A2A2 milk. My friends are lactose intolerant and they can drink and eat products made from A2A2 without pills or any problem.
Also be aware that lactose intolerance is not the same thing as lactose allergy. There’s no pill that can help with the latter and milk can fuck you up for several days. So it’s not ”just and upset tummy”. It’s much more complicated than that and some people, though they are only intolerant, the pills still don’t help them at all. Fox example, people with diverticulitis, the pills will not help, the colon will still be gravely upset.
Lactase is the “ingredient”, so you may find a generic brand. I use lactaid or the kirkland brand but I was able to find lactase in Mexico when we forgot our pills during a trip

Interestingly parmesan in any quantity over a couple of grams still messes me up, it really depends on the person

An actual allergy to lactose is extremely rare. More likely, you’ll be allergic to some protein in dairy products.

Tryptophane uptake is also inhibited so it could cause serious depressive issues.
