That’s smart, using a sous vide to get to the exact evaporation point of the ethanol. Color me impressed.
I was confused about that at first, then it clicked right before I read your comment. Like duh, a stovetop boiler would just boil everything whereas sous vide allows you to only boil the alcohol.
Bruh. Just dilute HPLC grade absolute ethanol with fruit juice. Why reinvent the wheel?
