Okay, perhaps not the most visually impressive meal ever. But it sure was delicious.

This is the recipe I used.

I tend to prefer using natural ingredients like mushrooms and nuts rather than artificial / highly processed meat substitutes when cooking vegetarian or vegan meals.

This was not terribly difficult or complex to make (finely chopping the mushrooms took a while though). I definitely recommend giving this recipe a try even if you’re not vegan.

    Are there some neat vegan alternatives to Parmesan that actually taste good?

    Tried some alternatives two years ago but wasn’t convinced.

      You can try grinding peanuts or other nuts to powder and salting them slightly. It comes close enough to the texture/look/taste, but obviously not a 100% replacement. Works reasonably well for salads too.

    Looks great! Thanks for sharing. Walnut and mushrooms are the old school 70s crunchy vegan mince replacement lol, I love it
