I think it’s the whites of his eyes - you rarely see much of the whites of a horse’s eyes, so giving them cartoon eyes like this is always gonna make him surprised.

Of course my DM would describe him as a glossy pure black stallion, so I have to put whites in for people to even find the eyes… :D
