Yes, gallo pinto is the national dish (it’s vegetarian/vegan!). We have a lot of fresh produce too, given it’s a tropical country. The Costa Rican version uses black beans.
Yeah gallo pinto is very good and healthy. The people of the country are extremely healthy.
What I was curious about was if the flavors of the cooking in the country have changed much over the past 20 years. I had to go to tourist restaurants sometimes for a change in spice and flavor.
