Singleplayer games are easy by default because you’re just solving a puzzle not competing against another person
single player games are hard because many people have very little time to practice due to life responsibilities and/or have disabilities that might affect coordination or reactions (for instance, i’m dyspraxic and there is never any chance of me getting far in a fromsoft despite how cool they look). what’s easy for you is not likely to be easy for everyone or even most

You are “competing” against the developer. Plus, the execution barrier for games can be quite high; as an example, if you are playing a single player FPS, even if you know the optimal solution to a challenge, following that solution still requires some level of aim and reaction time.
Hard mode is fun though… makes me feel like I’m improving at something and gives a reason to keep playing.
