They should be fresh, although I’ve seen versions with roasted ones too.
I love it.
Interestingly it tastes much better like this than a Single premixed sauce made from mayo and ketchup.

I have to admit I really like joppie sauce when I’m going for fries, but I regularly switch it up depending on what I’m looking for, so regular ketchup, samurai or andalouse all get their share.
