A bowl of somewhat lazy tomato based curry made with stew beef and served with jasmine rice, some toasted naan with garlic honey butter, and garnished with some cilantro :)
(Somewhat lazy because I cheated making the “sauce”, using a jar of curry sauce in addition to the aromatics I fried up, supplemented with a bunch of additional spices)

I agree, this is the very last of the curry I made, and I try to stretch it as far as possible 😅
Next time I think I wanna add more aromatics, another jar of sauce, and maybe cut the pieces of beef in half again- I feel like that’d stretch it further while still giving me a more enjoyable curry to rice ratio, there was a lot of meat relative to the sauce this time.

The sauce is a jar of tikka masala sauce from aldi ($3.55 where I live). In retrospect an additional jar of sauce would have been even better, so I’ll be keeping that in mind for next time
I fried up some diced onion, grated carrot, diced jalapeño, and minced ginger & garlic for my aromatics (I have carrot in the fridge I need to use up, and it makes a decent arromatic so I figured why not).
And in terms of spices I used garlic powder onion powder, clove, cumin, coriander, black pepper and maybe some other things I’m forgetting off the top of my head, not sure. I wanna get some garam masala to try, but its pretty expensive 😅 like most spices

Aldi almost only carries store brand stuff, which is a big part of why theyre so cheap. The store brand for their flavors of curry sauce (I think there are 3 flavors) is called “cook house”. If you’re on a tight budget aldi is an amazing option for grocery shopping (just bring a quarter if you need a grocery cart, you get it back when you’re done with the cart. And reusable grocery bags if you need them, they don’t have disposable ones but you can buy reusable ones while checking out if you need to)
But honestly pretty much any tikka masala sauce will work pretty well if you’re gonna add a whole bunch of stuff to dress it up, or even just any tomato based curry sauce. The brand shouldn’t make much of difference

Aldi has great little packages of mini naan, perfect for heating one up each time I prepare a bowl of leftover curry! I sprinkle water on the top and bottom, put it in my toaster oven and preheat to 450, and when my toaster oven beeps to let me know it’s preheated I take it out 😊

I used to do a chicken tikka masala in the crockpot - it froze well, and once I figured out what I was doing it became pretty effortless aside from the prep work.
My presentation never, ever looked like that, for sure. I was in workaholic mode back then, which was part of the appeal, and “didn’t have time” for that kind of nicety. But it froze well in single-serve portions on top of the jasmine rice. Mic, stir, and go.
Makes me want to run to the store, but no way I’m picking up worthwhile spices at Ruler Foods. Sounds like it’s time for me to make a Penzey’s Spices order, tho, unless you have a better suggestion for that stuff.
The rest was all off-the-shelf in any random grocery store. Nice and easy, and the wife doesn’t like it so I can go as heavy on e.g., cayenne as I want. Definitely a win…
This looks pretty good, but why a fork? Wouldn’t a spoo be more convenient for curry + rice?
A fork is just what I thought to grab, but the curry was also kinda more meat relative to the amount of sauce than I’d like, so next time I think I’m gonna cut the pieces of beef in half again and add more aromatics and another jar of sauce.
Extra meaty wasn’t at all bad, but I love the sauce, so next time there will be more of it!
Someone please tell me the secret about rice! It’s just plain nuggets of tastelessness in this application.
I’m not sure I understand, but to me some well seasoned white rice is honestly delicious by itself 😅 and then ideally you’d serve it with a bunch more sauce than I have here and get some sauce and maybe a piece of meat with every bite. For me the rice is a little bit of balance to the super flavorful sauce, but mostly just filler to stretch my money a bit further. I dont mind though, I really love rice lol
