S6 and higher has 3rd gen HR monitor. That’s I think the answer you’re searching for. Unsure which SE has the same sensor
This is like saying a car that remained off, but had the same tank of gas for 5 years, has the most MPG of any car ever. If you don’t use the watch, why even care how long it lasts? Not like you’re far from a charger in the 2 days it would take to kill it on not low power mode
What do you mean dim? Like the brightness level actually decreases? Or the screen goes black? Is it while you sleep or are you active/work at night? Just asking qs to try to help

That’s a 6 year old phone. Not gonna connect to the new watches. There’s great 2nd hand websites (that check everything like IMEI and loan status as well as Apple account locks) that you could easily get a 12 for $230 USD
