Sorry for being late, but maybe my ideas can give you some inspiration still:
I imagine your universe to be a more loose material like gravel or sand, where only the gravitational push from your stars condense the material around them to hard rock, which then forms a crust that your people live on. Once they drill through the crust, travel becomes somewhat easier.
On the question how to find other stars, maybe they are not that far away from each other. Your scientists might have noticed that your planet should be a sphere, but maybe it is deformed. The gravitational push from nearby stars could deform your inside out world to not be a perfect sphere, and the deformation gives way to models that predict the position of neighboring stars.
If the neighbors are quite close and your “space” material is dense enough to transmit sound, then large enough events there might be heard (or rather measured with sensitive enough seismographs) in your world. Making your people be wonder what is there.
