If you want a modern boring stack, Linux / Nginx / Postgres / javascript (node.js / express.js) is quite alright. The js ecosystem is notoriously fucked, but it only actually gets that way when you add client-side rendering frameworks and cross-compilers to it. Also use an oldschool templating engine (like pug or handlebars) instead of garbage like React.
