Vegan ice cream was too expensive, so I’ve transitioned to mashing peanut butter into frozen fruit with a splash of soy milk and a spoonful of sugar. Actually really good!
That sounds really good, I would never have thought of that in a million years. The vegan ice cream replacement I’ve done is blended frozen bananas, which isn’t bad but takes a bit of time and kitchen space that I’m too lazy to commit to
I find that room temp peanut butter melts the fruit juuuust enough to make it smooshable, then the soy milk thins the mixture out a bit so the peanut butter isn’t over powering.
I use frozen blueberries or mixed berries, but bananas are also good.
