If you want actual stealth I love the Dishonored series and I think Dishonored 2 has some amazing leveldesign. There are 3 games and they are all worth playing if you like the first you will like the second and so on.
With that said its VERY different from Elden Ring.

Yeah I dont think any game realizes the magical assassins fantasy in a steampunk world quite like the Dishonored series.
May I recommend deathloop. It’s dishonored but more difficult and with a very soulslike take on multiplayer.
I think there’s some dlc guns that break the game in half, but I never has those so.
It’s a 2D platformer and isn’t something that you’re going to spend a hundred hours on but I really enjoyed Mark of the Ninja.

For stealth, I had a lot of fun with MGSV and Hitman: WOA. I realize a lot of people want to upgrade their character, but I really enjoy upgrading my kit instead. I guess it’s all about how you role play 🤷♂️
Both run great on the Steam Deck (using controller). Not sure about Steam Machine.
I matched my specs to slightly better than the deck, so anything that runs on the deck will run on my homebrew rig
Awesome. Then I’m using Proton experimental for MGSV and the latest ge-Proton for Hitman. 60fps all day long.
Not that you asked but I also agree with others… Dishonored is a great stealth series but I’ve never tried them on SteamOS.
Shadow of Mordor/War are pretty awesome and sound like just what you’re looking for. Less focus on stealth but its more there than Elden Ring for sure.
Also seconding the Dishonored recommendations for sure - they have the same fluid movement and fast-paced stealth Cyberpunk does so well, and I’d add Prey because it’s also awesome.
Less exactly what you want, the newer Tomb Raider games are decent, though they’re mostly action-stealth gunplay vs (I assume you want) swords. Same with Control.
NieR Replicant and Automata will scratch the 3rd person action RPG itch but they have no stealth.
Lies of P is awesome, but it has no stealth. It has several unique mechanics that put it way above other souls-likes for me (the parrying and single recharge of healing to name a specific few).

Sekiro was originally conceived as a sequel to the Tenchu games, so you could definitely play one of those. I think Tenchu: Wrath of Heaven for PS2 or the Xbox port Return from Darkness would be good choices. Much more stealth-focused than Sekiro, though.
For something more modern, the Dishonored games are pretty highly-regarded first-person stealth games with great stories.
i used to play Tenchu: Stealth Assasssins as a kid, one of my favorite games to just beat over and over.
Wrath of heaven I liked too, but something about the ps1 was more satisfying idk 🧐 just personal preference I think
The Sly Cooper series is pretty Pog
Prey is a banger, stealth isn’t the biggest focus compared to something like Dishonored but still there

i liked lies of p, no stealth really but there is backstabbing, but i did find certain bosses to be way harder than others. gave up at one of the gank fights they have, maybe could have summoned idk

I just 100%ed Odyssey a couple of weeks ago and went back through a New Game+ playthrough to try out a damage overflow glitch build; partly for the hell of it, partly for revenge on that fucking game’s jankier collision mechanics. I have Valhalla, but haven’t fired it up yet – how does it stack up?

How about Kingdom Come: Deliverance? The first game and its sequel are both some of the best RPGs in this generation.
Baldur’s Gate 3 is also a must if you haven’t already. It’s just like playing D&D 5e
If you want more souls-like combat (kinda) I’d say ghost of tsushima or ghost of yotei if you have a ps5.
Lies of P is excellent, I’ve beaten it and really enjoyed it but you’re correct that there’s basically no stealth, or if there is it’s not viable. The game is a bit easier if you’re used to games like elden ring or sekiro, I was breezing past bosses. But I hear the DLC is a lot harder.
Ghost of Tsushima is loads of fun, the combat is right up there with Sekiro. Not gonna drop 800 for a PS5 tho lol.
I should try BG3 again, I got distracted and kind of bounced off of it the first time. I’d prefer something a little more action oriented too.

IIRC it felt to me that it avoids it through being heavy on actual character writing - so when Henry is prejudiced, say, it doesn’t so much seem as if that’s being presented as correct, but that things have happened in his life that have shaped the attitudes of a hot-headed young killing machine. Bit like if Geralt was more of a golden retriever than a white wolf (thinking about it, Henry drinks just as many potions and is constantly getting killed by peasants with pitchforks…).
KCD2 I liked more, because they finessed the realistic (i.e. annoying) combat juuuust enough that I could get into it, and there’s a notable questline where he runs into a group from a country he despises (having been fighting them for most of KCD1)… except the whole arc is him actually working past that from the perspective he’s gained over the years since then.
