Pulling the shoots also leaves chunks of root in the ground, which will start new plants. And good luck eating enough once it spreads. You can control it if you catch it early by covering it with black tarp, but if you miss a bit, you wasted all the effort. Knotweed remediation is hard.

Yeah, the usual way is glyphosate injection during the active growth phase. Glyphosate won’t kill you but I still wouldn’t want to consume it.
