Would love some vegan breakfast options that feel breakfasty (USian). Avacado toast is great but avacados can be pretty pricey and I can’t eat that every day. Currently I just have a bunch of cashews in the morning and while I do love cashews I want something that has the right vibes and cashews just don’t.

    Very quick: Müsli or oatmeal, overnight optional; Fruit and/or nuts; Toast/bagel with peanut butter, jam, or margarine;

    Less quick: Tofu scramble; Tofu “egg”: Mung bean “egg” (good for omelets or egg sandwiches): Crêpes, pancakes, or waffles made with vegan batter; French toast (either with the mung bean “egg” as batter or a vegan batter); Home fries / hash browns

    I’m not one for meat substitutes, but there are plenty of vegan breakfast sausages on the market if thats up your alley

  • Not USian, but the most common breakfast in Finland is oatmeal or any other porridge, I personally prefer 4 grain porridge which has wholemeal oat, barley, rye and wheat in it.

    The simplest way to make it is microwave porridge. You put 1dl of your oats and 2-3dl of water and a pinch of salt into a bowl and mix them. Microwave on high for three minutes and done.

    I usually eat mine with homemade apple jam and oat milk. Or just oat milk, vegan butter, sugar and cinnamon. Maybe throw some nuts on top like cashews or pecans. It’s also great with fruits and berries.

    My other go-to breakfast is a vegan smoothie where I use oat milk, half of a banana, often a half of an avocado if I have them, frozen lingonberries, a scoop of strawberry flavored vegan protein powder, flax seeds and psyllium husks plus a sweetener.

    I often do toast. Or tofu scramble, but that’s become more of a dinner food because it takes time to make. But I do love leftover scramble for breakfast! I also sometimes do grits. And lately I’ve been doing tater tot wraps, with a little (vegan) cheese, some spinach, refried beans, and whatever hot sauce/salsa is hanging out in the fridge.

    I have a “quesadilla” but with just refried beans for breakfast nearly every morning. Super easy to make and I can cook it while I prep tea/coffee, and any sides I might be adding like potatoes/toast/etc. I make a large batch of refried beans every few weeks and then freeze them in mason jars, and just always keep one of those in the fridge.

      I know you just described your bean prep, but just to inform anyone reading who might buy beans from the shop: canned refried beans often contain lard in my experience

    with just plain white tofu and your preferred seasonings you can make all kinds of spreads, just blend it smooth and you can make something cream cheese like. if you live somewhere where tofu is cheaper than bread, this and some wholegrain toast is a cheap and really nutritious breakfast.

      Do you use silken tofu for this or just whatever works?

      I’d add in different kinds of hummus or bean spreads are nice on toast or a bagel in the morning. When I had more time on my hands I’d make a tasty cilantro jalapeño hummus for my breakfasts.

    My go-to breakfast these days is fried potatoes. They’re dirt cheap and tasty. Combine with a tangy-sweet fruit and you’ll have all the flavors.
