Why have a chicken sink at all washing chicken accomplishes nothing except throwing bacteria everywhere
It helps to drain the juices off of it if it’s big bags of chicken in juices but yes I agree. Why not have a vegetable only sink
Oh sure I guess in a big kitchen setting you need a sink to drain into. I guess as long as anything else going into the chicken sink is gonna be thoroughly cooked after its probably fine regardless. I definitely wouldn’t wash anything I don’t intend to fully cook in the chicken sink though
I think that’s the operating theory that’s had this guy do this and 3 of my bosses watch him do it but it’s still a problem because it makes it easier to cross contaminate other surfaces if you’re not treating the potatoes, now contaminated, as hazardous. And if you don’t cook them as thoroughly as needed pathogens can survive etc
