Wide variety based on the application, but some things I’ll reach for include: gochujang; miso paste; mushroom powder; kimchi powder; smoked paprika; coconut aminos; nooch; seaweed

I know you said you’re open to MSG but there’s also “mushroom seasoning” that is an alternative. There’s also nutritional yeast. That stuff goes into a lot of my food. Popcorn, pizza, vegan mac and cheese.

In addition to using msg like others have mentioned you can look up ingredients and foods which contain a lot of glutamate, they’ll add savory flavor.
The bit at the top is just part of my campaign to denormalize using Japanese loan words when there are perfectly good English for the same thing. Japan doesnt get to name a whole flavor imo.

A bit of marmite added to mushrooms kicks them up to 11.
Might work with lentils. Otherwise some nutritional yeast is good

Not umami exactly, but minced garlic, ginger and green onions briefly fried in toasted sesame oil with some soy sauce or tamari added makes a really nice flavor for all kinds of stuff.

Bit of Maggi sauce - has MSG in it, and looks kinda like soy sauce in a lil bottle. Good way to introduce some MSG in there
